A Holistic Approach to Sustainable Gastronomy and Environmental Consciousness at NYN ESTI
At nice n easy Group, sustainable gastronomy is at the heart of our philosophy. Recognizing the need for change in a world where environmental protection is crucial, we incorporate sustainability practices into every aspect of our operations. From our menu to our daily practices, we promote ecological awareness and respect for the natural environment. In this context, we adopt a set of principles and actions for our restaurants summarized in a comprehensive approach to reduce our environmental footprint and promote ecological consciousness.
Since its inception, NYN ESTI has integrated sustainable practices, actions, and initiatives aimed at reducing our environmental footprint and raising public awareness of environmental protection, contributing to the creation of a sustainable future.
The sustainable techniques applied include a wide range of actions, starting from the rational use of raw materials and ending with their complete utilization. Specifically, biodynamic roots are utilized, demonstrating holistic material usage, while parts of materials that are not utilized are incorporated into gastronomic practices through drying, seasoning, and fermentation, as part of the aforementioned practices.
Additionally, zero waste is a fundamental axis in NYN ESTI’s philosophy. We weigh all waste on a daily basis, reduce it through recycling and collection systems, and utilize a waste disposer that drains waste water, enhancing the restaurant’s ecological action.
Regarding sustainable actions, special mention should be made of the use of local and ecological products, cultivated without the use of synthetic fertilizers. During their distribution, they are placed in returnable packaging to reduce plastic usage.
It is worth highlighting that renewable and non-renewable energy sources such as water and electricity are used sensibly and respectfully at NYN ESTI. An example is water filtration through four different filters and recording electricity consumption to ensure the lowest possible usage.
Sustainable actions include biodegradable paper packaging, reusable utensils, and eco-friendly plates. Remarkable is also the collaboration with artists promoting sustainability, such as Christiana Vardakou, who supplies the restaurant with towels and belts dyed with onion peels and avocado husks.
Furthermore, NYN ESTI engages in initiatives such as “The black squirrel Project,” supporting the care of stray animals in Metsovo by donating €1 with the purchase of a specific label wine bottle from Katogi Averoff. Additionally, it sources wooden plates from the “V Woods Family” company, which enhances the country’s flora by planting a tree in the name of each of their customers.
Ecological awareness is a characteristic instilled in the nice n easy Group team and is reflected in both the dishes and the actions of all restaurant members. Our ultimate goal is to raise awareness among our customers and develop a sense of respect for nature and the environment.
